When I think of good food, I think of high quality, fresh, delicious meals that make me feel good. I love cooking, and I love making things that I know are nutritious for my family and me. But let’s be realistic – it isn’t always easy or appealing to drizzle lemon juice over kale and call it a “salad”.
Surely you’ve heard of a capsule wardrobe – key pieces that you can mix and match, accessorize, and always trust to make you look and feel good. Why can’t we have that in the kitchen? A pantry full of key ingredients and a collection of recipes that we can mix and match, which make us feel good.
I wanted to create this Capsule Kitchen for my own household, and I thought it might be interesting to other readers. This is an ongoing project – I’ll share recipes once or twice a month and create a running list of ingredients and meal ideas. I decided to start just like our days start – with breakfast, so my first Capsule Kitchen recipe will be Early Morning Oatmeal.
