I love “what I ate” posts on other blogs, so it was one of the things I wanted to write about on AWL. Why? I have no idea. Its fascinating. Human nature is so interesting to me. Why do we care what other people are eating?! If we didn’t, would Instagram cease to exist?
I also think these posts will keep me accountable. I eat healthy about 70% of the time, and writing down what I eat (especially for strangers to see!) is a nice way to crack the culinary whip. Although these posts are published on Monday, they will probably be Friday’s meals (although this one is from Saturday!). This weekend, we were at our little country getaway for the first half of the day, and headed home in the afternoon. It was a crazy busy day, including a long country walk through the woods. Anyway, without further ado, here’s my menu…
This is actually a pretty normal breakfast for me – weekend or not. I am the Breakfast Queen so you’ll never see cereal or dry toast on these posts! Toast, eggs fried in olive oil, and broiled tomatoes. The grapefruit is a little unusual with the eggs, but I had one that I wanted to use while it was still fresh and delicious.
Lunch was an adventure to say the least! Brandon recently brought home nearly fifty pounds of venison in different cuts. Fifty pounds! Its so lean and all natural, so I was up for something new. He made burgers with venison sausage and I served it with crusty garlic bread and the most delicious spinach I’ve ever had! I’ll share the recipe at the bottom of the post. It was that good.
I am not a *big* snack person, but with everything we were doing I worked up quite the appetite. Before we headed home, we had a cup of tea and some amazing cooking. They were so yummy! I had an almond filled butter cookie and a chocolate filled shortbread cookie. Once we got home, I had a little bowl of chips while watching a football game with the Englishman. Here’s my secret recipe to chip perfection: kettle cooked barbecue + kettle cooked salt and vinegar. Its a winning combination!
By dinner time, I was completely exhausted, curled up on the sofa with Duke. B was an angel and whipped up a yummy salad with ham, cranberries, red onion, and a balsamic vinaigrette. I didn’t take a picture due to total exhaustion – so sorry!
This first Menu Monday is actually a terrible example of what I usually eat – I tend to have less snacks, lighter lunches, and heartier dinners! As promised, here’s that scrummy spinach recipe:
- 2-3 handfuls of fresh baby spinach
- Olive oil
- 1/4 – 1/2 onion, chopped finely
- 1 tablespoon of beef bouillon
- 1/4 c. skim milk
In a large skillet, sauté the onion in the olive oil until soft and translucent. Add the bouillon and milk and stir into a thick, creamy sauce. Add the spinach and coat in the sauce. Continue to sauté until spinach is wilted. Bon appetit!
